Blackened Tilapia

So I've been trying to eat a lot healthier lately and bought some tilapia at the grocery store. I don't cook. My husband definitely did not marry me for my cooking, unless cooking means warming up a frozen pizza or ordering at the McDonald's drive-thru.

I found a recipe and went to work, and it was super easy with hardly any ingredients (which is right up my alley!).

Here is the original recipe.

Ingredients:
  • 1 lb tilapia fillets
  • 1/2 cup flour
  • 2 tablespoons of cajun seasoning
  • milk
  • 1 tablespoon veggie oil

Instructions:
  1. Let fillets soak in milk for about 30 minutes to an hour in the fridge
  2. Combine 1/2 cup flour with 2 tablespoons of cajun seasoning. Mix well.
  3. Coat fish with flour mixture.
  4. Heat pan on medium heat with 1 tablespoon of vegetable oil
  5. Cook fillets until they flake easily, I did 3 minutes a side.
I steamed some rice and broccoli and topped with a little low-fat cheese (I love cheese!) and kaboom! Instant dinner. And SO tasty!
